For the Spiced Lamb

  • 500g (1 lb) ground lamb
  • 1 small red onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp ground coriander
  • 1/4 tsp ground cinnamon
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • Pinch of chili flakes or cayenne (optional)
  • 1 tbsp tomato paste
  • 1 tbsp lemon juice

For the Flatbreads & Toppings

  • 4 large flatbreads, naan breads, or pita breads
  • 1/2 cup hummus or thick Greek yogurt
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • Fresh parsley or mint, chopped
  • Pomegranate seeds (optional, for freshness)
  • Lemon wedges, for serving

Optional Yogurt Drizzle

  • 1/2 cup Greek yogurt
  • 1 clove garlic, grated
  • 1 tbsp lemon juice
  • 1 tbsp tahini
  • Salt to taste

Instructions

  1. Crisp the Flatbreads: Preheat oven to 200°C (400°F). Place flatbreads on a baking sheet, brush lightly with olive oil, and bake for 4-5 minutes until lightly golden and crisp at the edges. Set aside.
  2. Cook the Lamb: Heat olive oil in a large skillet over medium-high heat. Add the diced red onion and cook for 2-3 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
  3. Spice it Up: Add the ground lamb to the skillet. Break it up with a spoon and cook for 5-6 minutes until browned. Drain excess fat if needed.
  4. Season: Stir in cumin, smoked paprika, coriander, cinnamon, salt, pepper, and chili flakes. Add tomato paste and lemon juice, mixing well to coat the meat. Cook for another 1-2 minutes until fragrant. Taste and adjust seasoning.
  5. Make the Drizzle (Optional): In a small bowl, whisk together Greek yogurt, grated garlic, lemon juice, tahini, and a pinch of salt until smooth.
  6. Assemble: Spread a generous layer of hummus or yogurt on each warm flatbread. Top evenly with the spiced lamb mixture.
  7. Add Toppings: Scatter over cherry tomatoes, cucumber, sliced red onion, crumbled feta, and fresh herbs. Drizzle with the yogurt-tahini sauce and a squeeze of fresh lemon juice.
  8. Serve: Slice and serve immediately while warm.
