Ingredients
For the Spiced Chickpeas
- 2 cans (15 oz each) chickpeas, drained, rinsed, and patted dry
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper (optional)
- Salt and black pepper to taste
For the Bowl Base & Toppings
- 1 cup dry couscous, quinoa, or bulgur wheat, cooked
- 1 cup cherry tomatoes, halved
- 1 English cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped (optional)
- Hummus, feta cheese, or pickled turnips for serving
For the Creamy Tahini Lemon Dressing
- 1/3 cup tahini
- 3 tbsp fresh lemon juice
- 1 small garlic clove, minced
- 2–4 tbsp cold water to thin
- Salt to taste
Instructions
- Roast the Chickpeas: Preheat your oven to 425°F (220°C). Toss the dried chickpeas with olive oil, cumin, paprika, coriander, turmeric, cayenne, salt, and pepper. Spread on a baking sheet in a single layer and roast for 20-25 minutes, shaking the pan halfway, until golden and slightly crispy.
- Cook Your Grain: While the chickpeas roast, cook your couscous, quinoa, or bulgur according to package instructions. Fluff with a fork and set aside.
- Make the Tahini Dressing: In a small bowl, whisk together tahini, lemon juice, garlic, and salt. Add cold water one tablespoon at a time until you reach a smooth, pourable consistency.
- Prep the Vegetables: Chop the tomatoes, cucumber, onion, and herbs. If the red onion is too sharp, soak the slices in cold water for 5 minutes to mellow the flavor.
- Assemble the Bowls: Divide the cooked grains among 4 bowls. Top with a generous portion of spiced chickpeas, fresh vegetables, and herbs. Add a dollop of hummus and a sprinkle of feta if desired.

Notes
- Store components separately in airtight containers in the refrigerator for up to 4 days. Keep the dressing separate and add just before serving to keep vegetables fresh and chickpeas crisp. Not recommended for freezing.
